The irreplaceable Pablo Picasso once said, “Inspiration exists, but it has to find you working.” A phrase that has stayed in our collective imagination, reminding us not to sit around waiting for opportunities, but instead to work and strive to create the conditions needed.
At Avolution Lab we’ve practically tattooed this principle into our DNA. That’s why we’ve opened our doors to those seeking support, inspiration, or partnerships. Some even cross oceans—literally—to learn about what we do and experience Avolution Lab in person.
Thanks to Lia Bijnsdorp, founder and CEO of United Producers of Mexico and our ambassador in Mexico, we had the pleasure of welcoming Edgar Ledesma, CEO of Avocadox. This notable Mexican company plays a major role in the marketing of Hass avocados, backed by a robust packing system and a brand always seeking innovation.
As someone with a restless mind, Edgar is also excited about exploring avocado by-products. That’s why he came all the way to Seville to see firsthand each and every one of our projects that transform externally damaged avocados into value-added products.
We even visited the facilities of the Instituto de la Grasa, a research institute with which we’re developing the AVOLEO project, aimed at extracting ultra-high-quality avocado oil to study its physical, chemical, and culinary properties.
Edgar, as Picasso said, we’ll keep working.
