We’ve had the opportunity to visit an extraordinary space, the Gastronomic Innovation Center of the Community of Madrid. This facility is affiliated with the Department of Agri-food of the Madrid Institute for Rural, Agrarian, and Food Research and Development, IMIDRA. Its mission is to harness research and innovation for the benefit of the Madrid agri-food sector, promoting its growth and leveraging its impact on other sectors such as tourism and employment.
We were welcomed by their director, Almudena Lázaro, and the R&D team, who introduced us to some of the projects they are working on. Additionally, we had the chance to sample sauces from our partner, The Avocado Guys Spain.
